Tasty Tuesday: Quick and Easy Guacamole

I have always hated guacamole. I remember as a kid my Dad trying to encourage me to taste it when we would  go to a Mexican restaurant for dinner. The color, the texture– GROSS! Mom recently made some though that changed my mind. It was DELICIOUS. If you’re looking for that perfect game day dip, look no further. I promise you won’t regret giving it a try. I have listed all the ingredients and step by step instructions below.


Ingredients: 2 Ripe Avocados, Halved and pitted | 1 can of Regular Rotel | 1\2 a bunch of fresh Cilantro | 4 – 6 Green Onions | 3 – 4 Fresh Garlic Gloves, pressed | 1/4 cup of Lime Juice | Fresh Ground Salt and Pepper

Instructions: 1.) Finely chop green onions and cilantro in food processor. 2.) Blend Avocados, green onions and cilantro in food processor together. 3.) Once chopped and blended mix with all other ingredients in a sperate bowl.  4.) Add fresh ground salt and pepper to taste. 5.) Serve and Enjoy

Tasty Tuesday: Strawberry Nutella Poptarts

If you know me personally you know that I’m addicted to Nutella. It’s a comfort food to me. It ranks right on up there with Chicken Fingers and Cheez Its. I recently came across a recipe on Pinterest and had to try it the minute I saw “Nutella” in the caption.  I do not profess to be a chef, just an occasional baker and let me tell you, I’ll leave that to the professionals. The kitchen was a mess, I started over 4 times, I forgot a step… the list goes on and on.  Below is my successful (at least that’s what Mom and Dad said when they tasted the poptarts) attempt at Strawberry Nutella Poptarts.

To start things off you want to make sure you have all the ingredients. For this recipe you will need: 1 egg yolk | 1 teaspoon water | 1 package refrigerated pie crust | 1 teaspoon of Nutella (per poptart) | 1 teaspoon strawberry jelly (per poptart) | 2 large strawberries, sliced lengthwise and carved into hearts | coarse sugar (or granulated sugar)


First, Preheat oven to 350°F and cover a cookie sheet with parchment paper.

In a small bowl, whisk together egg yolk and 1 teaspoon water. Set aside.

Roll out pie crust till it’s pretty thin (about 1/16th of an inch thick). Cut into 2.5 inch x 3.5 inch rectangles, re-rolling the dough as needed. Depending on how many poptarts you are making will depend on the amount of rectangles you will end up with.


Take 2 of the rectangles and cut out a heart in the center, using the strawberries carved into hearts as a guide. Set aside.

On the other side of the  remaining rectangle, spread 1  teaspoon of Nutella, leaving a 1/2 inch border around the edges. Then top the Nutella with a layer of strawberry jam, again making sure to leave a 1/2 inch border.


Place a strawberry carved heart on top of the strawberry jam layer, in the center of the rectangle. Top with the pie dough with the heart carved out of the center. Seal the edges with the prongs of a fork and brush with egg wash mixture. Sprinkle heavily with coarse sugar.



Bake for 12-14 minutes, or until golden brown. Transfer to a cooling rack. Let cool for 5 minutes and then serve!


I couldn’t let Mom and Dad try them and me not get a bite. I have to admit they are VERY tasty and possibly addictive. I will most certainly be making these again very soon!
